Brass and other copper-tin alloys are among the most popular of traditional materials for kitchen utensils. However, in order to be used, brass has to be lined with tin to prevent the copper from leaching into the food. Other common materials are clay and iron. Increasingly, these substances are being replaced by stainless steel, aluminum, and plastics. The markets on this street were opened every day.
